Add yeast to pancake mix, then add approximately 250mL lukewarmwater. Shake vigorously and set aside for approximately 20 mins.
Meanwhile heat the oil in a medium saucepan on medium heat.
Drop dollops of dough in the oil and fry on each side until golden brown. Remove from oil with a slotted spoon and place in a bowl. Drizzle maple syrup and allow to soak.
To serve, place a few loukamades in a serving bowl, top with strawberries and crushed pistachios.
