1 D’Orsogna Chorizo (chopped)
800g Perfection Fresh Cherry Tomatoes (Diced)
1 chopped large yellow onion
1/4 teaspoon chilli flakes
1/2 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1 can cannellini beans
1 1/2 tablespoon sugar
Handful of chopped parsley
Olive oil to drizzle
Coat a deep pan with olive oil and heat it over the stove.
Once hot, add the Chorizo, chopped onion and tomatoes into the pan.
Add in the cannellini beans with some of the liquid from the can.
Add in the smoked paprika, cumine, cayenne pepper and chilli flakes.
Allow the mixture to simmer and cook down over medium heat.
If desired, add in oven roasted garlic and tomatoes with some of the liquid.
Add in sugar and stir to combine. Create three dibits in the mixture and crack an egg into each one.
Place into an oven pre-heated to 180℃ for 5-10 minutes.
Once out of the oven, sprinkle salt and pepper to taste. Garnish with freshly chopped parsley and serve immediately.
