Spiced Devilled Eggs

Ingredients
- 2 tbsp ground coriander
- 2 tbsp ground cumin
- 1 1/2 tbsp ground turmeric
- 2 tsp ground ginger
- 1 tsp mustard powder
- 1/2 tsp ground black pepper
- 1 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1/2 tsp Kashmiri chilli
- 12 eggs, boiled
- 2 tbsp mayonnaise
- 1 tbsp above spice blend
- Three Threes Pickled Onions and Gherkins
Methods
- Make spice blend and set aside in jar.
- Remove yolks from whites and in a small food processor blend with the rest of the ingredients to a smooth paste, season. Place in piping bag with a star tip.
- Pipe into whites.
- Serve with pickles
