Matteo Ernandes was born and raised on the island of Lampedusa, Sicily. He grew up in the pizzeria with his father and at age 14, started developing his craft as a pizzaiolo during the summer. In 2014, Matteo moved to Sydney and fell in love with Bondi. His passion for surfing and the fire of the oven is what drives his career. In 2019 Matteo discovered the Contemporary Pizza Manifesto, which defines the ethical and professional guidelines for healthy and tasty pizza. Since then, Matteo is committed to the search for discovering the perfect dough.
